Your 90s snack dreams are about to come true.

I would like to apologise in advance for the amount of sugar you're going to want to consume after reading this post. It's slightly worrying that this is becoming a running theme in my foodie posts.

For a 90s inspired recipe, I wanted to recreate one of my snack favourites. I knew I loved party rings, but I'd already recreated my own version a few months ago... yes, I do wish I was slightly more organised and had posted it this month, but never mind. I asked my Mum if she could remember anything I used to love eating, but there was just a never ending list. What can I say? I've always loved to eat anything covered in sugar. I was looking online for inspiration, then it came to me... popcorn.

You know I love myself a good popcorn mix, so I knew I had to do it. Can we just start by talking about how beautiful and pastely this mix looks! I honestly didn't even try, it just comes naturally to me. (Honestly, I didn't try.) I wanted to keep this mix vegan, so I only used vegan snacks, but you can create your own mix if you wish. For a chocolatey mix, you can use Wagon Wheels, Smarties, and Curly Wurly, or you can include cereals or pretzels for something savoury.

Even though it looks like a sugar overload, it's honestly not that sweet. The pink wafers and party rings give the mix a little sweetness, plus rainbow drops just taste like air! I love the texture of the mix too, from the crunchy biscuit, to the light popcorn, to the crispy wafer. This mix has been a huge success, even from my toughest critics, which sadly means I need to make a second batch soon.

You might be feeling a little parched after eating all that popcorn, if only we had a 90s style drink right now. Was that a hint? I think so...

THE TUCK SHOP 90S POPCORN MIX

This recipe makes 8 generous serving.

    INGREDIENTS

  • 1 tbsp light oil
  • 1/3 cup popcorn kernels or 6 cups of popped corn
  • 250g dairy-free white chocolate
  • 80g party rings (you can make your own)
  • 80g pink wafers
  • 40g rainbow drops

    INSTRUCTIONS

  1. On a medium heat, add your oil to a large saucepan. Add your popcorn kernels and shake to coat. Once you hear your first pop, reduce to a low heat. Every now and then, shake the saucepan to make sure the popcorn doesn't burn.
  2. Once the popping has stopped, lay your popcorn on parchment paper and remove any unpopped corn. Scoop the corn into a large bowl. Sprinkle with a pinch of salt.
  3. Cut or break the pink wafers and party rings into small bitesized pieces. Along with the rainbow drops, mix with the popcorn, but leave a little of each to one side.
  4. Melt the white chocolate and gradually pour all over your popcorn mix and stir well.
  5. Lay out the popcorn mix evenly onto parchment paper and pour over the remaining snacks.
  6. Leave to set before eating.
